Web Traffic not going out of VPN connection - HELP!!!!

I have setup Softether on a windows server 2012 and am using NT authentication.

Can someone please help with the following:-
1. How do I use Windows DHCP instead of Virtual DHCP in SOftether?

2. What is the best method to setup multiple servers around the world to build a global vpn network?

3. How can a get all my traffic at home to use the VPN?

We dont want to use SecureNAT due to the speed restrictions so how do we set it up to use Windows Server DHCP and also do we need to set a gateway of the host or the gateway of the NIC?
