Is it possible to specify a non-standard port fot PSK communication (i.e., something other than 500?
If so - how do I configure it?

No this is not possible and unrecommended. As per ISAKMP and IPSec standard, the ports 500 and 4500 are used for authentication.
If you really really need to change that port number, you need to change it inside the source code of the server and the client and recompile both
