Hello,

My VPS has a multiple Ip's and I would like it switches them randomly for every new connection to VPN. Or even during one connected session.
Kindly explain to me, how this can be done?

Also, how I can get IPv6 addresses from dedicated subnet on vpn available to connections randomly or somehow.

I think SE server listens on all interfaces and SE server dev version listens on IPv6 as well. So you can use SE server dev version
for distributing load to all IPv4s you can use HA-proxy (not tested)
