No UNC & SMB File Share Access Over SSTP \ L2TP Azure VPN???

Hello,
PROBLEM: Cannot access any resources on remote network (UNC paths, SMB shares, etc)
I can PING both subnet's for the VPN server. (both interfaces for the server)
Struggling as nothing seems to work!
I tried DDNS and was not successful. Azure worked after some set-up.
I have to say, the documentation is REALLY badly laid out here. You click on the DDNS and Azure section and it does not advise you of WHERE the set-up and configuration guides are! 3 days and I found a guide with screenshots. :p
PC > VPN > WAN > VPN AZURE > WAN > SOFTETHER L2TP/SSTP SERVER
No port forwarding or control over the WAN router, as it is a serviced office. Internet then comes in to another Router to distribute to VPN Server and other PCs and hardware.
I cannot view any network resources or mapped drives, printers, etc... Strange!
I tried disabling the NAT-T option (switching to TCP) on client but no difference...
Set 2 x TCP connections under Advanced Settings on client... No difference.
Ticked Bridge/Router Mode on client. No difference.
Could someone please advise how to:
#1. browse network paths (UNC / SMB) over the VPN.
#2. How to disable VPN redirecting INTERNET traffic to VPN and instead to local WAN.
#3. How to only browse remote network via VPN.

All server logs show me getting 192.168.30.10 IP. ICMP traffic ok.
Firewall disabled / enabled and same result.
Can ping server 192.168.30.1 and real IP 192.168.1.123
My subnet uses 192.168.10.xx so no issues with same subnet settings on each end...
