connecting ok, transferring data not ok... continued...

OK, so I installed the VPN server software on my home network, and I now I connect via a Cascade Connection between the two servers.
And just like before, I can see the machines on either side of the link, but as soon as I try to copy a large file, it copy times out after 60 seconds or so, and then shows an error.
My setup is
[client1]->[Linux server1]->NAT->internet->NAT->[Win server2]->[client2]
I'm doing everything with a TCP port (disabled NAT-T) - and I have opened this port on both NATs. The connection never drops, and I can see the machines on either side with no problem at all.
This seems like a really basic setup - there is nothing complicated going on.
I have done the exact same setup to a completely different home IP and get the same results. I must be missing something silly, or it just doesn't work.
Any suggestions at all how to track this down?
