I succesfully installed a Softher VNP server and I can connect it also using an Android mobile using the OPENVPN app.

The main issue is that on mobile side is impossible to change the DNS address. On a Windows side is really simple changing dns settings of VPN connection, but not on Android.

Is it possible to set server side the custom DNS that I want to use (Google's one) ? The server ethernet connection already has the Google DNS set but not come into mobile OpenVpn connection.

Solved myself !
Simply add this in the clent config file :

dhcp-option DNS <dns_server_ip_address>

Another solution is simply add DNS servers to Secure NAT settings
OpenVPN client will use them
