I am a newbie in the field of working with softether and how to set it up
Is it possible to choose a program from the client side that the VPN does not use?
How can a specific program not use vpn?

No, but you can use static routes to redirect traffic for the program.

Can you explain this method completely? I have no idea how to implement the solution you said

Thank you for your good advice.
1-Do you think it is better to run softether on a Linux server or on Windows?
2-Another problem I encountered is tunneling two servers to each other, which I did, but their ping increases dramatically.
If I ping from this server to another server, the ping will increase by 2 to 5 numbers, but when I connect from the client side, this number will rise to 50.
