I have an OSX laptop that I'd like to connect to a HTTPS-based VPN. I found SoftEther VPN via a bit of googling.

the only clients which can connect to SoftEther VPN with Ethernet-over-HTTPS are Windows clients. Is this still true? If so, what Ethernet-over-HTTPS client should I use and with what settings?

It is possible to connect through Ethernet over HTTPS with Mac OSX. There is a Mac OSX Softether build (http://www.softether-download.com/) but it is experimental and lacks a GUI, this means it is cli/terminal only.
I would recommend you to use OpenVPN (through TunnelBlick) or L2TP/IPSec.

Would love to, but I'll be using the VPN in a location which blocks L2TP and PPTP.
I'll try the softether build...
